- Preheat oven to 375°F (190°C) and boil water in a kettle.
- Sauté garlic in butter briefly, add spinach and wilt. Drain excess moisture.
- Quickly blister halved tomatoes in the same skillet.
- Layer spinach, tomatoes, and 1/2 tbsp cream into each lightly greased ramekin.
- Crack an egg into each ramekin, season with salt/pepper, top with remaining cream and Parmesan.
- Place ramekins in a baking dish and fill dish halfway with boiling water to create a bain-marie.
- Bake for 12-18 minutes until whites are set but yolks still jiggle.
- Carefully remove from water bath, garnish with chives, and serve with toast.
