- Preheat oven to 375°F (190°C). Par-boil shells for 7-8 minutes (very al dente). Drain and set aside.
- Mix ricotta, squeezed dry spinach, egg, Parmesan, garlic powder, nutmeg, salt, and pepper in a bowl.
- Melt butter in a saucepan. Sauté minced garlic, then whisk in flour and cook for 1 minute.
- Slowly whisk in warm milk. Simmer until thickened. Remove from heat and stir in Parmesan cheese.
- Spread 1 cup sauce in baking dish. Stuff shells with filling and arrange in dish.
- Top with remaining sauce, mozzarella, and Parmesan. Bake 25-30 minutes until bubbly and browned.
- Fry sage leaves in butter until crisp. Garnish baked shells with crispy sage before serving.
Notes
Ensure spinach is squeezed completely dry to prevent a watery filling. Par-boiling the pasta is crucial so it doesn't get mushy in the oven.
