Creamy Shrimp and Mushroom Tagliatelle

Ingredients
  

Pasta & Seafood
  • 12 oz tagliatelle or fettuccine pasta
  • 1 lb large shrimp peeled and deveined
  • to taste salt and black pepper for seasoning shrimp
Sauce & Vegetables
  • 2 tbsp olive oil divided
  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms sliced
  • 3 cloves garlic minced
  • 1/2 cup dry white wine or chicken broth
  • 1.5 cups heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 tsp red pepper flakes optional
Garnish
  • 2 tbsp fresh parsley chopped
  • lemon wedges optional, for serving

Equipment

  • Large skillet or Dutch oven
  • Large Pot (for pasta)
  • Tongs
  • Colander

Method
 

  1. Pat shrimp dry and season generously with salt and pepper.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear shrimp for 2-3 minutes per side until cooked through. Remove and set aside.
  3. Add remaining oil and butter to the same skillet. Add sliced mushrooms and cook undisturbed for 4-5 minutes until browned. Stir and cook for 2 more minutes.
  4. Reduce heat to medium. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  5. Deglaze pan with white wine, scraping up browned bits. Let it reduce by half.
  6. Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  7. Add heavy cream to the skillet and bring to a simmer. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
  8. Add cooked pasta and seared shrimp back to the skillet. Toss to coat, adding reserved pasta water if needed to thin sauce. Stir in parsley and serve.

Notes

For the best flavor, use raw shrimp you peel yourself. If you don't consume alcohol, chicken or vegetable broth is a perfect substitute for the white wine. Do not use pre-grated cheese as it contains anti-caking agents that prevent smooth melting.
