Creamy Sausage and Tortellini Soup

Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 tbsp tomato paste
  • 4 cups chicken broth
  • 1 can crushed tomatoes 14 oz
Add-ins & Finish
  • 10 oz cheese tortellini refrigerated
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated, for garnish

Equipment

  • Dutch oven or large pot
  • Wooden Spoon
  • Knife and cutting board
  • Ladle

Method
 

  1. Heat a large pot over medium-high heat. Add sausage and cook until browned, breaking into chunks.
  2. Add onion to the pot and sauté until translucent. Stir in garlic and spices, cooking for 1 minute.
  3. Stir in tomato paste, then add crushed tomatoes and chicken broth. Bring to a simmer.
  4. Let simmer for 10 minutes to develop flavor. Add tortellini and cook for 3-5 minutes.
  5. Reduce heat to low. Stir in heavy cream and spinach. Simmer until spinach is wilted.
  6. Serve hot, garnished with fresh parmesan cheese.

Notes

Store leftovers in an airtight container for up to 3 days. Pasta may absorb liquid, so add a splash of broth when reheating.
