- Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom and slightly up the sides of a 9-inch springform pan. Freeze for 20 minutes.
- In a chilled bowl, whip 1.5 cups of heavy cream until stiff peaks form. Set aside in the fridge.
- In a large bowl, beat the softened cream cheese until completely smooth. Add powdered sugar, vanilla, and lemon juice. Beat until combined and fluffy.
- Gently fold the whipped cream into the cream cheese mixture in two additions until just combined. Do not overmix.
- Pour the filling over the crust and smooth the top. Cover and refrigerate for at least 8 hours, or overnight, until set.
- Before serving, whip the remaining 1 cup of heavy cream with 2 tbsp powdered sugar to stiff peaks.
- Remove cheesecake from the pan. Pipe whipped cream rosettes onto the cheesecake and drizzle generously with caramel sauce.

Ensure cream cheese is fully at room temperature before mixing to avoid lumps. Chill the cheesecake for the full recommended time for the best texture. Use a hot knife for clean slices.
