- Bring a large pot of salted water to a boil.
- In a large skillet, heat butter and olive oil over medium-high heat. Add sliced mushrooms and cook, undisturbed, for 3-4 minutes to brown. Stir and cook for another 3-4 minutes until golden.
- Reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant.
- Add ravioli to the boiling water and cook according to package directions (usually 3-5 minutes). Reserve 1 cup of pasta water before draining.
- While pasta cooks, add heavy cream and sun-dried tomatoes to the skillet with mushrooms. Bring to a simmer and let thicken for 2-3 minutes.
- Stir in grated parmesan cheese and spinach until spinach is wilted. Add the cooked ravioli and 1/4 cup of reserved pasta water. Toss gently to coat.
- If sauce is too thick, add more pasta water a tablespoon at a time. Season with salt and lots of black pepper. Serve immediately with extra parmesan.
Notes
For a protein boost, add grilled chicken or Italian sausage. The sauce thickens quickly as it cools, so serve immediately.
