- Bring a large pot of salted water to a boil and cook the farfalle until al dente. Reserve ½ cup of pasta water, then drain.
- Meanwhile, melt butter with olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook until deeply browned, about 7-9 minutes.
- Reduce heat to medium, add minced garlic, and cook for 1 minute until fragrant.
- Pour in the heavy cream and simmer for 2-3 minutes to slightly thicken.
- Reduce heat to low and stir in the Parmesan cheese until melted and smooth. Season with salt and pepper.
- Add the baby spinach and chopped sun-dried tomatoes, stirring until the spinach is wilted, about 1-2 minutes.
- Add the cooked pasta to the skillet and toss to coat. Use reserved pasta water to thin the sauce if necessary.
- Serve immediately, garnished with extra Parmesan and black pepper.
Notes
For a protein boost, add grilled chicken or shrimp. Use freshly grated Parmesan for the smoothest sauce.
