  • 0.25 cup chia seeds
  • 1 cup unsweetened almond milk or milk of choice
  • 0.25 cup plain Greek yogurt or dairy-free yogurt
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest tightly packed
  • 1.5 tbsp maple syrup or honey
  • 0.5 tsp vanilla extract
  • 1 pinch sea salt
Toppings
  • 2 tbsp crushed almonds or walnuts
  • 1 tsp extra lemon zest for garnish

Method
 

  1. In a medium bowl or mason jar, whisk together almond milk, Greek yogurt, lemon juice, maple syrup, vanilla extract, and salt until smooth.
  2. Fold in the fresh lemon zest.
  3. Gradually pour in the chia seeds while whisking continuously to prevent clumping.
  4. Let the mixture sit at room temperature for 5 to 10 minutes.
  5. Give the mixture one final, vigorous whisk to break up any clumps that formed.
  6. Cover and refrigerate for at least 2 hours, or overnight for the best texture.
  7. Stir before serving. Top with extra lemon zest and crushed nuts. Serve cold.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For a smoother texture, you can blend the chia seeds before mixing.
