Creamy Golden Hummus with Fresh Mint & Chili Oil

Ingredients
  

Hummus Base
  • 1 can (15oz) chickpeas drained and rinsed (or 1.5 cups cooked)
  • 0.5 cup tahini well stirred
  • 0.25 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tsp ground turmeric
  • 0.5 tsp ground cumin
  • 2-4 tbsp ice water as needed for texture
Toppings
  • 3 tbsp extra virgin olive oil
  • 1 tsp chili flakes or Aleppo pepper
  • 0.25 cup fresh mint leaves torn

Equipment

  • Food Processor or High-Speed Blender
  • Spatula
  • Measuring cups and spoons
  • Saucepan (optional for oil infusion)

Method
 

  1. If using canned chickpeas, boil them in water with 1/2 tsp baking soda for 10 minutes to soften skins. Drain and rinse with cold water.
  2. In a food processor, combine tahini and lemon juice. Process for 1 minute, scrape sides, and process again until creamy and pale.
  3. Add minced garlic, turmeric, cumin, and salt to the tahini mixture. Process for 30 seconds.
  4. Add the chickpeas and blend for 1 minute until thick paste forms.
  5. With the processor running, slowly drizzle in ice water one tablespoon at a time until the hummus is ultra-smooth and creamy.
  6. Taste and adjust salt or lemon if needed.
  7. Transfer to a serving bowl. Use a spoon to create a swoosh/well in the center.
  8. Pour olive oil into the well, sprinkle generously with chili flakes, and scatter fresh mint leaves on top.

Notes

For the smoothest texture, peel the chickpeas by pinching the skins off after boiling. Store in an airtight container for up to 4 days.
