Method
- Boil pasta in salted water until al dente. Reserve 0.5 cup pasta water, then drain.
- Pat steak cubes dry and season with salt, pepper, and garlic powder.
- Heat oil and 1 tbsp butter in a skillet over high heat. Sear steak 1-2 mins per side until browned. Remove and set aside.
- Reduce heat to medium. Add remaining butter and garlic to the pan. Sauté 30 seconds.
- Deglaze pan with beef broth, scraping up browned bits. Simmer for 1 minute.
- Stir in heavy cream and simmer 3-4 minutes until slightly thickened.
- Stir in parmesan cheese until smooth. Add pasta and toss to coat.
- Return steak and juices to the pan. Stir gently to warm. Garnish with parsley and serve.
Notes
Make sure to sear the steak in batches if your pan is small to ensure it browns rather than steams. For a lighter sauce, you can use half-and-half but it will be less creamy.
