Creamy Garlic Steak and Butternut Squash Bowls

Ingredients
  

Base and Veggies
  • 1 medium butternut squash peeled, seeded, and cubed
  • 2 tbsp olive oil
  • 1 cup long-grain white rice Jasmine or Basmati
  • 2 cups water or broth
Steak Bites
  • 1.5 lbs sirloin steak cut into 1-inch cubes
  • 1 tbsp neutral oil canola or avocado
  • 1 tsp garlic powder
  • 1 tsp onion powder
Creamy Garlic Sauce
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup low-sodium beef broth
  • 0.75 cup heavy whipping cream
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender and caramelized.
  2. Cook the white rice in water or broth according to package directions. Fluff with a fork and set aside.
  3. Pat steak cubes dry and season with garlic powder, onion powder, salt, and pepper.
  4. Heat neutral oil in a large skillet over medium-high heat. Sear steak bites in a single layer for 1.5-2 minutes per side. Remove from pan and keep warm.
  5. Reduce heat to medium-low. Melt butter in the same skillet and sauté minced garlic for 1 minute.
  6. Pour in beef broth to deglaze, scraping up the browned bits from the bottom. Simmer for 2 minutes.
  7. Whisk in heavy cream, Dijon mustard, and Worcestershire sauce. Simmer 3-5 minutes until sauce thickens.
  8. Assemble bowls with rice, roasted squash, and steak bites. Drizzle generously with the pan sauce and garnish with parsley.

Notes

Make sure your skillet is very hot before adding the steak to ensure a good crust without overcooking the center. Sweet potatoes can be substituted for the butternut squash.
