Method
- Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
- Season chicken chunks with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through (6-8 mins). Remove and set aside.
- Reduce heat to medium. Add butter to the same skillet. Sauté garlic for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Simmer for 2-3 minutes to reduce slightly.
- Reduce heat to low. Whisk in parmesan cheese until smooth. Add reserved pasta water if needed to thin.
- Return chicken and pasta to the skillet. Toss to coat evenly in the sauce.
- Garnish with fresh parsley and serve immediately.
Notes
For a lighter version, use half-and-half instead of heavy cream, but be careful not to boil it too vigorously to prevent curdling.
