Creamy Garlic Parmesan Chicken and Broccoli Bowl

Char-grilled sliced chicken breast served over tender-crisp broccoli florets, all generously smothered in a rich, homemade garlic parmesan cream sauce. A satisfying, low-carb dinner.

Ingredients
  

Grilled Chicken
  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Broccoli & Sauce
  • 1 large head broccoli cut into florets
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 2 tbsp fresh parsley chopped, for garnish
  • Salt and pepper to taste for sauce

  • Large Skillet or Saucepan

Method
 

  1. Pound chicken breasts to even thickness. Rub with oil and mix of garlic powder, onion powder, paprika, salt, and pepper.
  2. Preheat grill to medium-high. Grill chicken 5-7 mins per side until fully cooked (165°F). Rest 10 mins, then slice.
  3. Meanwhile, steam broccoli florets until tender-crisp (approx 5 mins).
  4. In a skillet, melt butter and sauté minced garlic for 30 seconds.
  5. Add heavy cream and simmer gently for 3 minutes to thicken slightly.
  6. Reduce heat to low. Gradually whisk in freshly grated Parmesan until smooth. Season sauce with salt and pepper.
  7. Toss steamed broccoli in the sauce. Serve in bowls topped with sliced chicken and fresh parsley.

Notes

For the smoothest sauce, you must use freshly grated cheese. Pre-grated cheese contains anti-caking agents that will make the sauce grainy. You can add 2-4oz of cream cheese with the heavy cream for an even thicker sauce.
