  • 2 cups vanilla bean ice cream slightly softened
  • 1 cup pink lemonade chilled
  • 2 tbsp frozen pink lemonade concentrate optional, for stronger flavor
  • 1 tbsp fresh lemon juice
  • 0.5 cup crushed ice
Garnishes
  • 2 slices fresh lemon
  • 2 fresh strawberries optional

  • Tall serving glasses
  • Straws

Method
 

  1. Place two tall serving glasses in the freezer to chill for 15 minutes before making the drink.
  2. In a blender, add the chilled pink lemonade, fresh lemon juice, frozen concentrate (if using), and crushed ice.
  3. Add the slightly softened vanilla bean ice cream to the blender.
  4. Blend on medium-high speed for 30 to 45 seconds until thick, smooth, and frothy. Do not over-blend to prevent melting.
  5. Pour the thick frosted lemonade into the chilled glasses, allowing it to pile up slightly at the top.
  6. Garnish the rim with a slice of fresh lemon and add a fun straw. Serve immediately.

Notes

For a thicker consistency, add another scoop of ice cream. For a dairy-free version, substitute with a high-quality oat or coconut milk vanilla ice cream.
