Creamy Cowboy Butter Chicken

Ingredients
  

Chicken
  • 1.5 lbs chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp butter unsalted
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Cowboy Butter Sauce
  • 3 tbsp butter unsalted, melted
  • 4 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 0.5 cup heavy cream
  • 0.25 cup chicken broth
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper adjust to taste
  • 0.5 tsp red pepper flakes
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • 1 tsp dried thyme

Equipment

  • Large Skillet or Saucepan
  • Cutting board

Method
 

  1. Pat chicken dry and season with salt, pepper, and half the paprika.
  2. Heat 1 tbsp butter and olive oil in a skillet over medium-high heat.
  3. Sear chicken for 4-5 minutes until golden and cooked through. Remove from pan.
  4. Reduce heat to medium. Add remaining 3 tbsp butter and minced garlic to the pan. Sauté for 1 minute.
  5. Whisk in Dijon mustard, lemon juice, zest, spices, and herbs.
  6. Pour in chicken broth to deglaze, then lower heat and slowly whisk in heavy cream.
  7. Simmer gently for 3-4 minutes until sauce thickens and becomes glossy.
  8. Return chicken to the pan and toss to coat in the sauce. Garnish and serve.

Notes

Serve over mashed potatoes or rice to soak up the extra sauce. For a keto option, serve with cauliflower rice.
