Creamy Cilantro Mint Dressing

Ingredients
  

Base & Herbs
  • 1 cup plain Greek yogurt full-fat recommended
  • 2 cups fresh cilantro leaves and tender stems, loosely packed
  • 1/2 cup fresh mint leaves packed
Flavor & Seasoning
  • 1/4 cup fresh lime juice
  • 2 cloves garlic peeled
  • 1 small jalapeño pepper seeded, optional for heat
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey optional
  • 3/4 tsp kosher salt to taste
  • 1/4 tsp black pepper

Equipment

  • Blender or food processor
  • Spatula
  • Glass jar or airtight container for storage

Method
 

  1. Wash and dry the cilantro and mint. Roughly chop the jalapeño if using.
  2. Place all ingredients—yogurt, cilantro, mint, lime juice, garlic, jalapeño, olive oil, honey, salt, and pepper—into a blender or food processor.
  3. Blend on high until the mixture is completely smooth and creamy, and the herbs are pulverized into tiny green specks. You may need to stop and scrape down the sides.
  4. Taste and adjust seasoning with more salt, lime juice, or honey as needed.
  5. Transfer to a jar and refrigerate for at least 30 minutes before serving to allow flavors to meld. Store refrigerated for up to one week.

Notes

For a richer dressing, substitute half of the Greek yogurt with mayonnaise. If you prefer a thinner consistency, add a tablespoon of water or milk at a time while blending.
