Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.5 cups milk
  • 2 tbsp butter melted
  • 0.25 tsp salt
  • 1 tbsp sugar optional
Filling
  • 2 cups cooked chicken breast shredded or diced
  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 0.5 tsp garlic powder
  • salt and pepper to taste
Orange Sauce
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup fresh orange juice
  • 1 tbsp orange zest
  • 0.5 tsp paprika
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Whisk together flour and salt in a large bowl. Add eggs and gradually pour in milk while whisking. Add melted butter and whisk until smooth. Let batter rest for 30 minutes.
  2. Combine softened cream cheese and sour cream in a bowl. Add chicken, mozzarella, parsley, chives, garlic powder, salt, and pepper. Mix well and set aside.
  3. Heat non-stick skillet over medium heat. Pour ¼ cup batter, tilt pan to spread thinly. Cook 1-2 minutes until edges lift, flip and cook 30 seconds. Stack with parchment between.
  4. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  5. Place 3-4 tablespoons filling down center of each crepe. Fold sides over filling and roll up. Place seam-side down in baking dish.
  6. Melt butter in saucepan over medium heat. Whisk in flour and cook 1-2 minutes. Gradually add chicken broth, whisking to prevent lumps. Simmer until slightly thickened, 3-4 minutes.
  7. Reduce heat and stir in heavy cream, orange juice, orange zest, and paprika. Season with salt and pepper. Simmer 2-3 minutes until smooth.
  8. Pour orange sauce evenly over stuffed crepes. Cover with foil.
  9. Bake 20-25 minutes until heated through and bubbling. Remove foil for last 5 minutes if desired.
  10. Let rest 5 minutes, garnish with fresh parsley, and serve immediately.

Notes

Crepes can be made a day ahead and stored in refrigerator with parchment between layers. Filling can also be prepared in advance. For extra richness, sprinkle additional cheese on top before baking.
