Method
- Season chicken breasts generously with half of the Cajun seasoning.
- Heat oil and butter in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until cooked through. Remove and set aside.
- Add peppers and onions to the skillet. Sauté for 3-4 minutes. Add garlic and cook 1 minute more.
- Pour in chicken broth to deglaze the pan, scraping up browned bits. Reduce heat to medium-low.
- Stir in heavy cream and remaining Cajun seasoning. Simmer for 3 minutes until thickened.
- Stir in parmesan cheese. Return chicken to the pan and spoon sauce over the top.
- Garnish with parsley and serve hot.
Notes
Serve over pasta, rice, or mashed potatoes. For a lighter version, use half-and-half instead of heavy cream (sauce will be thinner).
