Ingredients
  

Fritter Base
  • 1 lb ground chicken or finely chopped turkey
  • 0.75 cup dried cranberries roughly chopped
  • 2 tbsp fresh rosemary finely minced
  • 2 cloves garlic minced
  • 0.5 cup almond flour or panko
  • 1 egg large, beaten
  • 0.25 cup scallions sliced
Seasoning
  • 1 tsp kosher salt
  • 0.5 tsp black pepper cracked
  • 0.5 tsp onion powder
  • 2 tbsp avocado oil for frying

  • Cast iron or non-stick skillet

Method
 

  1. In a large bowl, combine ground chicken, cranberries, rosemary, garlic, and scallions.
  2. Mix in the seasonings, egg, and almond flour until a cohesive dough forms.
  3. Form into 12 small patties, about 1/2 inch thick.
  4. Chill the patties in the refrigerator for 15 minutes to help them set.
  5. Heat oil in a skillet over medium-high heat. Fry fritters in batches.
  6. Cook for 4-5 minutes per side until deeply golden and cooked to 165°F.
  7. Drain on paper towels and let rest for 3 minutes before serving.

Notes

Serve with a side of cranberry sauce or Greek yogurt dip. For air frying: spray with oil and cook at 375°F for 12-15 minutes, flipping halfway.
