An incredibly easy and elegant appetizer featuring a wheel of Brie baked until gooey and topped with a sticky, sweet cranberry pecan glaze.

Ingredients
  

Baked Brie
  • 1 wheel Brie cheese 13-16 oz, whole
Cranberry Pecan Glaze
  • 0.5 cup dried cranberries
  • 0.5 cup pecans chopped, lightly toasted
  • 0.25 cup brown sugar packed
  • 2 tbsp maple syrup pure, Grade A or B
  • 1 tbsp butter unsalted
  • 0.25 tsp cinnamon
  • 0.25 tsp nutmeg optional

  • Baking sheet or oven-safe dish
  • Sharp knife

Method
 

  1. Preheat oven to 350°F (175°C). Place the Brie wheel on a parchment-lined baking sheet or oven-safe dish.
  2. In a small saucepan, combine cranberries, brown sugar, maple syrup, butter, cinnamon, and nutmeg. Heat over low to medium heat, stirring until sugar dissolves and butter melts (2-3 minutes). The mixture should be thick and syrupy.
  3. Remove from heat and stir in the toasted pecans.
  4. (Optional) Score the top rind of the Brie in a shallow cross-hatch pattern.
  5. Spoon the thick cranberry-pecan glaze evenly over the top of the Brie wheel.
  6. Bake for 12 to 17 minutes, until the center is soft and gooey/molten when pressed gently.
  7. Serve immediately with crackers, bread, or apple slices while the cheese is still hot and oozing.

Notes

For the best ooze, serve immediately. The glaze sets up quickly as it cools. The rind helps hold the thick, gooey cheese inside while baking.
