  • 2 sheets puff pastry thawed but cold
  • 10 oz goat cheese softened log (chèvre)
  • 0.5 cup dried cranberries chopped
  • 0.25 cup fresh chives finely chopped
  • 1 tbsp honey optional
Egg Wash
  • 1 egg large
  • 1 tbsp water

Method
 

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Unfold thawed puff pastry sheets on a lightly floured surface. Roll out slightly to smooth seams.
  3. Spread softened goat cheese evenly over the pastry sheets, leaving a thin border at the edges.
  4. Sprinkle chopped cranberries and chives over the cheese. Drizzle with honey if using.
  5. Roll the pastry tightly into a log. Wrap in plastic and chill for 20 minutes to firm up.
  6. Slice the chilled log into 1/2-inch thick rounds using a sharp serrated knife.
  7. Arrange rounds on baking sheets. Whisk egg and water, then brush tops of pinwheels.
  8. Bake for 18-22 minutes until puffed and golden brown. Cool on a wire rack before serving.

Notes

To ensure the best puff, keep the dough cold until it hits the hot oven. If the dough gets sticky while rolling, pop it back in the fridge for 10 minutes.
