Ingredients
  

Chicken & Stuffing
  • 4 chicken breasts boneless skinless
  • 6 oz Brie cheese sliced
  • 2 cups fresh spinach chopped
  • 0.5 cup dried cranberries
  • 1 tbsp garlic powder
  • 1 tbsp olive oil for searing
Balsamic Glaze
  • 1 cup fresh cranberries
  • 0.5 cup balsamic vinegar
  • 0.25 cup honey
  • 0.5 cup chicken broth
  • 1 tbsp fresh thyme

Equipment

  • Oven-safe skillet
  • Chef's knife
  • Toothpicks
  • Small saucepan

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Butterfly the chicken breasts by slicing horizontally (not all the way through) and opening like a book.
  3. Season chicken inside and out with garlic powder, salt, and pepper.
  4. Place slices of Brie, spinach, and dried cranberries inside each breast. Fold over and secure with toothpicks.
  5. Sear chicken in hot olive oil in an oven-safe skillet for 3-4 minutes per side until golden.
  6. Transfer skillet to oven and bake 15-20 minutes until chicken reaches 165°F.
  7. Simmer balsamic vinegar, broth, honey, and fresh cranberries in a saucepan for 10 minutes to make the glaze.
  8. Remove toothpicks, pour glaze over chicken, garnish with thyme, and serve.

Notes

Always double check for toothpicks before serving. If you don't have an oven-safe skillet, transfer the seared chicken to a baking dish before putting it in the oven.
