Method
- Preheat oven to 400°F (200°C).
- Butterfly the chicken breasts by slicing horizontally (not all the way through) and opening like a book.
- Season chicken inside and out with garlic powder, salt, and pepper.
- Place slices of Brie, spinach, and dried cranberries inside each breast. Fold over and secure with toothpicks.
- Sear chicken in hot olive oil in an oven-safe skillet for 3-4 minutes per side until golden.
- Transfer skillet to oven and bake 15-20 minutes until chicken reaches 165°F.
- Simmer balsamic vinegar, broth, honey, and fresh cranberries in a saucepan for 10 minutes to make the glaze.
- Remove toothpicks, pour glaze over chicken, garnish with thyme, and serve.
Notes
Always double check for toothpicks before serving. If you don't have an oven-safe skillet, transfer the seared chicken to a baking dish before putting it in the oven.
