Ingredients
  

Sandwich Build
  • 4 slices sourdough bread thick sliced
  • 6 oz Brie cheese sliced, rind removed if preferred
  • 4 tbsp cranberry sauce whole berry
  • 0.5 apple Granny Smith or Honeycrisp, thinly sliced
  • 3 tbsp unsalted butter softened
  • 1 tsp fresh thyme leaves removed from stem

Equipment

  • Cast Iron Skillet or Pan
  • Spatula
  • Knife

Method
 

  1. Butter one side of each slice of sourdough bread generously.
  2. Flip two slices over (unbuttered side up) and layer with half of the Brie slices.
  3. Top the cheese with apple slices, a dollop of cranberry sauce, and a sprinkle of fresh thyme.
  4. Add the remaining Brie slices on top (this helps the top bread stick).
  5. Place the remaining bread slices on top, buttered side facing out.
  6. Heat a skillet over medium-low heat. Cook sandwiches for 4-5 minutes until golden brown.
  7. Flip carefully and cook for another 3-4 minutes until cheese is fully melted and bread is crisp.
  8. Slice in half and serve warm.

Notes

Using medium-low heat is key to ensuring the thick layer of cheese melts before the bread burns. Cover the pan for the last minute if needed.
