- Butter one side of each slice of sourdough bread generously.
- Flip two slices over (unbuttered side up) and layer with half of the Brie slices.
- Top the cheese with apple slices, a dollop of cranberry sauce, and a sprinkle of fresh thyme.
- Add the remaining Brie slices on top (this helps the top bread stick).
- Place the remaining bread slices on top, buttered side facing out.
- Heat a skillet over medium-low heat. Cook sandwiches for 4-5 minutes until golden brown.
- Flip carefully and cook for another 3-4 minutes until cheese is fully melted and bread is crisp.
- Slice in half and serve warm.
Notes
Using medium-low heat is key to ensuring the thick layer of cheese melts before the bread burns. Cover the pan for the last minute if needed.
