Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup creamy peanut butter commercial brand
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 tsp vanilla extract
Dry Ingredients
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 cup sugar for rolling

Equipment

  • Baking sheets
  • Wire rack
  • Fork

Method
 

  1. Cream butter, peanut butter, and sugars together until light and fluffy (3-4 mins).
  2. Beat in eggs one at a time, then add vanilla.
  3. Whisk flour, baking soda, baking powder, and salt in a separate bowl.
  4. Gradually mix dry ingredients into wet until just combined.
  5. Chill the dough in the refrigerator for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Scoop dough into balls and roll in extra sugar.
  7. Place on baking sheet and press a criss-cross pattern with a fork.
  8. Bake for 10-12 minutes until edges are golden but centers are soft.
  9. Cool on baking sheet for 5 minutes, then transfer to wire rack.

Notes

Do not overbake! They will appear slightly underdone when you take them out but will firm up as they cool. Store in an airtight container for up to 5 days.
