Classic Mint Mojito

A refreshing and frosty classic Cuban cocktail packed with muddled fresh mint, tart lime, sweet rum, and a mountain of crushed ice.

Ingredients
  

Cocktail Base
  • 10-12 leaves fresh spearmint plus sprig for garnish
  • 1 oz fresh lime juice
  • 0.75 oz simple syrup or 2 tsp superfine sugar
  • 2 oz white rum
  • 2 cups crushed ice
  • 2-3 oz club soda chilled

Equipment

  • Highball glass
  • Muddler
  • Bar spoon
  • Ice crusher or Lewis bag

Method
 

  1. Place the fresh mint leaves into the bottom of a highball glass.
  2. Pour the freshly squeezed lime juice and simple syrup over the mint leaves.
  3. Using a muddler, gently press down and twist the mint leaves 3 to 4 times to release their oils.
  4. Pour in the white rum and fill the glass entirely to the brim with crushed ice.
  5. Using a bar spoon, vigorously stir the mixture from the bottom up to distribute the ingredients.
  6. Top with chilled club soda, add a little more crushed ice to form a dome, and garnish with a fresh mint sprig.

Notes

Do not over-muddle the mint or the drink will become bitter. Always use freshly squeezed lime juice for the best flavor.
