Ingredients
  

Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 0.5 cup butter melted
  • 0.25 tsp salt
Cheesecake Layer
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
Cinnamon Swirl Topping
  • 0.5 cup butter softened
  • 1 cup brown sugar packed
  • 2 tbsp ground cinnamon
  • 0.25 cup all-purpose flour
  • 2 tbsp honey
Finishing
  • 0.5 cup powdered sugar for dusting

Equipment

  • 9-inch springform pan
  • Electric mixer or stand mixer
  • Mixing bowls
  • Roasting pan for water bath
  • Aluminum foil

Method
 

  1. Preheat oven to 325°F (165°C). Wrap outside of 9-inch springform pan with aluminum foil.
  2. Combine graham cracker crumbs, sugar, melted butter, and salt. Press firmly into bottom of prepared pan.
  3. Bake crust for 10 minutes until golden. Remove and cool while preparing filling.
  4. Beat cream cheese until smooth and fluffy, about 2-3 minutes. Gradually add sugar and beat until creamy.
  5. Add eggs one at a time on low speed, mixing just until incorporated. Mix in vanilla, sour cream, and heavy cream.
  6. Pour cheesecake batter over cooled crust. Tap pan gently to release air bubbles.
  7. Mix softened butter, brown sugar, cinnamon, flour, and honey until thick paste forms.
  8. Drop spoonfuls of cinnamon mixture onto cheesecake batter. Swirl with knife in spiral pattern from center outward.
  9. Place springform pan in roasting pan. Add hot water to roasting pan halfway up sides of springform pan.
  10. Bake 60-75 minutes until edges are set but center jiggles slightly. Turn off oven, crack door, and cool in oven 1 hour.
  11. Remove from water bath and cool completely at room temperature.
  12. Refrigerate at least 6 hours or overnight. Dust with powdered sugar before serving.

Notes

For best results, ensure all dairy ingredients are at room temperature before mixing. Store covered in refrigerator up to 5 days or freeze up to 3 months. Use a hot, clean knife for perfect slices.
