Method
- Preheat oven to 325°F (165°C). Wrap outside of 9-inch springform pan with aluminum foil.
- Combine graham cracker crumbs, sugar, melted butter, and salt. Press firmly into bottom of prepared pan.
- Bake crust for 10 minutes until golden. Remove and cool while preparing filling.
- Beat cream cheese until smooth and fluffy, about 2-3 minutes. Gradually add sugar and beat until creamy.
- Add eggs one at a time on low speed, mixing just until incorporated. Mix in vanilla, sour cream, and heavy cream.
- Pour cheesecake batter over cooled crust. Tap pan gently to release air bubbles.
- Mix softened butter, brown sugar, cinnamon, flour, and honey until thick paste forms.
- Drop spoonfuls of cinnamon mixture onto cheesecake batter. Swirl with knife in spiral pattern from center outward.
- Place springform pan in roasting pan. Add hot water to roasting pan halfway up sides of springform pan.
- Bake 60-75 minutes until edges are set but center jiggles slightly. Turn off oven, crack door, and cool in oven 1 hour.
- Remove from water bath and cool completely at room temperature.
- Refrigerate at least 6 hours or overnight. Dust with powdered sugar before serving.
Notes
For best results, ensure all dairy ingredients are at room temperature before mixing. Store covered in refrigerator up to 5 days or freeze up to 3 months. Use a hot, clean knife for perfect slices.
