- Place quinoa in a fine-mesh sieve and rinse thoroughly under cold water for 45 seconds to remove bitterness. Drain well.
- In a medium saucepan, combine the rinsed quinoa, almond milk, 1 cup water, 1/2 tsp cinnamon, and salt. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes until liquid is absorbed.
- Remove from heat. Leave the lid on and let the quinoa rest for 5 minutes. After resting, fluff gently with a fork and stir in the vanilla extract.
- While quinoa rests, heat coconut oil in a skillet over medium heat. Add diced apples, 1 tsp cinnamon, and nutmeg. Sauté for 4-5 minutes until slightly softened.
- Add maple syrup and 1 tbsp water to the skillet with the apples. Let it bubble gently for 2-3 minutes until it forms a thick, glossy syrup coating the apples.
- Divide the hot fluffy quinoa into bowls. Top generously with the glossy cinnamon apples and all the syrup from the pan.
- Garnish with shredded coconut or chopped walnuts if desired. Serve immediately.
Notes
Rinsing the quinoa is absolutely mandatory, otherwise the dish will taste soapy. To reheat leftovers, add a splash of milk and microwave.
