Salad Ingredients
  • 1 lb large shrimp peeled and deveined (raw or pre-cooked)
  • 1 tbsp olive oil for cooking shrimp
  • 2 large avocados ripe, pitted and diced
  • 1 cup cherry tomatoes quartered
  • 0.25 cup fresh cilantro finely chopped
Cilantro Lime Dressing
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 clove garlic minced
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper freshly cracked
  • 1 pinch red pepper flakes optional

Equipment

  • Large Skillet
  • Large mixing bowl
  • Small bowl or jar (for dressing)

Method
 

  1. If using raw shrimp: Heat 1 tbsp olive oil in a skillet over medium-high heat. Season shrimp lightly with salt and pepper, then cook for 2-3 minutes per side until pink and opaque. Let cool completely.
  2. In a small bowl, whisk together 2 tbsp extra virgin olive oil, lime juice, minced garlic, salt, black pepper, and red pepper flakes to make the dressing.
  3. In a large mixing bowl, combine the cooled shrimp, quartered cherry tomatoes, and chopped cilantro.
  4. Pour the dressing over the shrimp mixture and gently toss to combine and coat evenly.
  5. Right before serving, gently fold in the diced avocados to prevent them from mashing.
  6. Taste for seasoning, add more lime juice or salt if desired, and serve immediately.

Notes

If using pre-cooked shrimp, you can skip step 1 entirely, making this a 10-minute no-cook meal. Best enjoyed fresh, as avocado will brown over time.
