Ingredients
  

Red Balls
  • 4 oz cream cheese softened
  • 1 cup vanilla wafer crumbs finely crushed
  • 3 tbsp cherry or strawberry Jell-O powder dry mix
  • 0.5 cup shredded coconut sweetened
Green Balls
  • 4 oz cream cheese softened
  • 1 cup vanilla wafer crumbs finely crushed
  • 3 tbsp lime Jell-O powder dry mix
  • 0.5 cup shredded coconut sweetened

Equipment

  • Mixing bowls
  • Food processor or Ziploc bag/Rolling pin
  • Hand mixer or spatula
  • Baking sheet

Method
 

  1. Place vanilla wafers in a food processor and pulse until fine crumbs form. Divide crumbs into two equal portions (1 cup each).
  2. In a medium bowl, beat 4 oz of softened cream cheese until smooth.
  3. Add the Red Jell-O powder to the cream cheese and mix until color is uniform.
  4. Stir in 1 cup of wafer crumbs until a moldable dough forms. If too sticky, refrigerate for 20 minutes.
  5. Repeat the process in a separate bowl with the remaining cream cheese, Green Jell-O powder, and crumbs.
  6. Roll the dough into 1-inch balls using your hands.
  7. Roll each ball immediately in shredded coconut to coat completely.
  8. Place on a tray and refrigerate for at least 30 minutes before serving.

Notes

Store these in the refrigerator as they contain cream cheese. They can be made up to 5 days in advance.
