- Line a 12-cup muffin tin with paper liners, ensuring they sit smoothly against the tin.
- Melt chocolate chips with coconut oil in microwave in 30-second intervals, stirring until smooth and glossy.
- Using a pastry brush or spoon, coat the inside of each liner with a thin layer of melted chocolate, covering bottom and sides completely.
- Refrigerate for 10 minutes until the first layer hardens completely.
- Apply a second coat of chocolate over the first layer, ensuring no thin spots. Refrigerate for 20-30 minutes until completely set.
- Beat heavy cream with powdered sugar and vanilla extract until stiff peaks form. If using cream cheese, beat it smooth first, then fold in whipped cream.
- Carefully peel away paper liners from the set chocolate cups, working gently to avoid cracking.
- Pipe or spoon cream filling into each chocolate cup, filling about three-quarters full.
- Top each cup with 2-3 fresh raspberries, pressing gently into cream. Garnish with chocolate shavings or mint if desired.
- Keep refrigerated until serving. Best enjoyed within 24 hours but can be stored up to 3 days in airtight container.
Notes
For best results, use high-quality chocolate. The chocolate cups can be made up to a week ahead and stored in refrigerator. Fill just before serving for freshest results. Can substitute raspberries with strawberries, blackberries, or cherries.
