Chocolate Peanut Butter Banana Bites

Ingredients
  

Banana Bites
  • 3 large bananas ripe but firm, sliced into rounds
  • 0.5 cup creamy peanut butter
Chocolate Coating
  • 1.5 cups dark chocolate chips
  • 1 tbsp coconut oil refined
  • 1 pinch flaky sea salt optional, for topping

Method
 

  1. Line a baking sheet with parchment paper. Slice the bananas into 1/4-inch to 1/2-inch thick rounds.
  2. Lay half the banana slices flat. Spread a small dollop (about 1/2 tsp) of peanut butter onto each slice. Top with the remaining banana slices to create little sandwiches.
  3. Place the baking sheet in the freezer for at least 1 to 2 hours until the banana sandwiches are completely solid.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring thoroughly in between, until completely melted and smooth.
  5. Remove the frozen bananas from the freezer. Using two forks, dip each sandwich into the melted chocolate, turning to coat evenly. Tap off excess chocolate.
  6. Place coated bites back onto the parchment paper. Sprinkle lightly with sea salt if desired.
  7. Return to the freezer for at least 30 minutes to allow the chocolate shell to harden completely. Serve frozen or let sit for 5 minutes before eating.

Notes

Store leftovers in an airtight container in the freezer for up to 3 months. Let them sit at room temperature for a few minutes before eating for the best texture.
