  • 1 loaf (approx. 12 oz) thick-cut brioche or challah bread cut into 1-inch thick sticks
  • 3 large eggs
  • 1 cup heavy cream or whole milk
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
  • 1 tbsp cornstarch
Frying Fat
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
Garnish & Dipping
  • 1 cup miniature semi-sweet chocolate chips
  • 1 cup caramel sauce homemade or store-bought

Method
 

  1. Cut the brioche into thick, 1-inch uniform sticks. Sturdiness is key.
  2. In a shallow bowl, whisk together eggs, heavy cream (or milk), granulated sugar, vanilla extract, ground cinnamon, salt, and cornstarch until completely smooth.
  3. Heat a large deep skillet or griddle over medium heat. Add unsalted butter and olive oil, letting it melt and bubble.
  4. Quickly submerge each bread stick into the custard batter, turning to coat all sides evenly. Do not over-soak; a 1-2 second dip per side is sufficient.
  5. Working in batches, place dipped sticks into the hot skillet. Fry for 2-3 minutes per side, turning with tongs to ensure all four sides are golden-brown and crispy.
  6. Transfer cooked sticks to a wire rack. For the signature presentation, stack sticks in a paper cone or on a plate. Generously drizzle with warm caramel sauce, allowing it to drip down, and immediately sprinkle with miniature chocolate chips. Serve immediately with extra caramel sauce for dipping.

Notes

Do not over-soak the bread. For maximum crispiness, use stale or air-dried bread. The paper cone is an optional, fun serving method.
