Ingredients
  

Fritters
  • 1 lb ground chicken
  • 2 cups zucchini grated and squeezed dry
  • 0.33 cup almond flour or breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup green onions chopped
  • 1 tsp salt
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil for frying
Dipping Sauce
  • 0.5 cup Greek yogurt plain
  • 1 cup fresh cilantro
  • 1 tbsp lime juice
  • 1 clove garlic

Method
 

  1. Grate the zucchini and place it in a clean towel. Squeeze tightly to remove as much liquid as possible.
  2. In a large bowl, mix the dried zucchini, ground chicken, almond flour, egg, garlic, onions, and spices until combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Form the mixture into small patties (approx 2 tbsp each) and place in the hot pan.
  5. Cook for 4-5 minutes per side until golden brown and cooked through (internal temp 165°F).
  6. While fritters cook, combine yogurt, cilantro, lime juice, and garlic in a blender. Pulse until smooth.
  7. Serve hot fritters with the green dipping sauce.

Notes

Ensure you squeeze the zucchini very dry to prevent soggy fritters. These freeze well for up to 3 months.
