Chicken Garlic Sandwich

Ingredients
  

Chicken Filling
  • 2 cups cooked chicken breast shredded
  • 4 cloves fresh garlic minced
  • 2 tbsp butter for garlic mixture
  • 0.25 cup mayonnaise
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.25 tsp paprika
  • 2 tbsp fresh parsley chopped, for garnish
Assembly
  • 8 slices bread white, sourdough, or preferred
  • 8 slices cheese mozzarella, cheddar, or provolone
  • 3 tbsp butter for toasting

  • Mixing bowls

Method
 

  1. Shred cooked chicken breast into bite-sized pieces using two forks and place in a large mixing bowl.
  2. Heat 2 tablespoons butter in a small skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until golden and fragrant.
  3. Pour garlic butter mixture over shredded chicken and mix thoroughly to coat all pieces.
  4. Add mayonnaise, garlic powder, black pepper, salt, and paprika to chicken mixture. Stir until well combined and taste to adjust seasonings.
  5. On four bread slices, layer one slice of cheese, generous portion of garlic chicken mixture, and another cheese slice. Top with remaining bread slices.
  6. Heat a large skillet or griddle over medium heat. Spread butter on outside of each sandwich, coating both top and bottom.
  7. Place sandwiches in heated skillet and cook for 3-4 minutes until golden-brown and crispy. Press down gently with spatula.
  8. Flip sandwiches carefully and cook for another 3-4 minutes until second side is toasted and cheese is completely melted.
  9. Remove from heat and let rest for 1-2 minutes. Slice diagonally, garnish with fresh parsley, and serve immediately.

Notes

For extra flavor, add caramelized onions or jalapeños. Use freshly cooked chicken for best results. Can prepare chicken filling up to 3 days in advance and store refrigerated.
