- Preheat oven to 375°F (190°C). Cut a circle from the top of each bread bowl and scoop out soft bread, leaving a ½-inch shell.
- Mix melted butter with minced garlic and optional parsley. Brush inside and top rim of bread bowls. Bake for 8-10 minutes until golden.
- Heat olive oil in a skillet. Season chicken cubes with salt/pepper. Cook for 6-8 minutes until golden and cooked through. Set aside.
- Cook fettuccine al dente. Drain, reserving 1 cup pasta water.
- In the same skillet, melt ½ cup butter. Sauté 2 cloves minced garlic for 1 min. Add heavy cream and milk. Simmer gently for 5-7 minutes, whisking, until sauce thickens.
- Reduce heat. Whisk in Parmesan, black pepper, and nutmeg (if using) until cheese melts and sauce is thick, creamy, and gooey/viscous. Add reserved pasta water if needed.
- Add cooked fettuccine and chicken to the Alfredo sauce. Toss until fully coated in the thick sauce.
- Spoon chicken Alfredo into warm toasted garlic bread bowls. Garnish with extra Parmesan and fresh parsley. Serve immediately.
Notes
Use freshly grated Parmesan for the best creamy sauce. Serve immediately as Alfredo sauce can thicken upon cooling. For meal prep, keep sauce separate and combine just before serving.
