Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
- Add the egg, egg yolk, peppermint extract, and vanilla extract. Mix until smooth and combined.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Fold in the semi-sweet chocolate chips and dark chocolate chunks.
- Scoop 1.5 tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are golden but the centers are still soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough in the refrigerator for 30 minutes before baking. Store in an airtight container at room temperature for up to 5 days.
