Dry Ingredients
  • 2.5 cups old-fashioned rolled oats
  • 0.5 cup raw cashews roughly chopped
  • 0.5 cup raw almonds roughly chopped
  • 1 cup dried cranberries
  • 2 tbsp chia seeds optional
Binder
  • 0.66 cup honey
  • 0.25 cup creamy peanut butter or almond butter
  • 0.25 cup brown sugar packed
  • 0.5 tsp salt
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 or 9x9 inch square pan with parchment paper, leaving overhangs for easy removal.
  2. Spread oats, cashews, and almonds on a baking sheet. Bake for 8-10 minutes, stirring once, until lightly toasted and fragrant.
  3. In a saucepan over medium heat, combine honey, nut butter, brown sugar, and salt. Stir until sugar dissolves and mixture bubbles slightly.
  4. Remove saucepan from heat and stir in vanilla extract.
  5. In a large bowl, combine the toasted oat mixture with the dried cranberries and chia seeds.
  6. Pour the liquid binder over the dry ingredients and mix thoroughly until everything is evenly coated.
  7. Transfer mixture to the prepared pan. Use the bottom of a glass or measuring cup to press down very firmly to compact the bars.
  8. Refrigerate for at least 2 hours until firm. Remove from pan using parchment handles and slice into bars.

Notes

Pressing the mixture firmly is the key to preventing the bars from crumbling. Store in the refrigerator for best texture.
