Ingredients
  

Cherry Layer
  • 1 pound fresh cherries pitted and halved
  • 3 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
Mascarpone Cream
  • 4 egg yolks large
  • 0.5 cup granulated sugar
  • 16 oz mascarpone cheese room temperature
  • 1.5 cups heavy whipping cream
  • 1 tsp vanilla extract
Assembly
  • 24-30 ladyfinger cookies savoiardi
  • 1.5 cups strong espresso or coffee cooled
  • 3 tbsp coffee liqueur optional
  • 2-3 tbsp unsweetened cocoa powder
  • fresh cherries for garnish

Equipment

  • Double boiler or heatproof bowl
  • Hand mixer or stand mixer
  • Shallow dish for dipping

Method
 

  1. Combine cherries with sugar, lemon juice, and vanilla in a saucepan. Cook over medium heat for 8-10 minutes until softened. Cool completely and drain, reserving ΒΌ cup syrup.
  2. Whisk egg yolks and sugar in a heatproof bowl. Place over simmering water and whisk for 5-7 minutes until thickened and pale. Remove from heat and cool for 10 minutes.
  3. Beat mascarpone until smooth. Add cooled egg mixture and vanilla, beating until fluffy and well combined.
  4. Whip heavy cream to stiff peaks. Gently fold whipped cream into mascarpone mixture in three additions.
  5. Mix cooled espresso with coffee liqueur and reserved cherry syrup in a shallow dish.
  6. Quickly dip ladyfingers in coffee mixture for 2-3 seconds per side. Arrange in bottom of 9x13-inch dish.
  7. Spread half of mascarpone cream over ladyfingers. Distribute half of cherry compote over cream.
  8. Repeat layering with remaining coffee-dipped ladyfingers, mascarpone cream, and cherries.
  9. Cover tightly with plastic wrap and refrigerate for at least 6 hours or overnight.
  10. Before serving, dust generously with cocoa powder and garnish with fresh cherries.

Notes

For best results, use room temperature mascarpone and allow full chilling time. Can be made 1-2 days ahead. Store covered in refrigerator for up to 3 days.
