- Place zucchini slices in a colander and toss with salt. Let sit for 20-30 minutes to draw out moisture. Pat thoroughly dry with paper towels.
- Preheat oven to 400°F (200°C). Grease a 9x13 baking dish.
- Toss dried zucchini with olive oil and garlic powder. Roast on a baking sheet for 10 minutes to soften slightly (optional but ensures non-watery casserole).
- Spread a thin layer of marinara sauce on the bottom of the baking dish.
- Layer the zucchini rounds in the dish. Top with remaining marinara sauce.
- Sprinkle Italian seasoning over the sauce, then top evenly with mozzarella and Parmesan cheese. Add pepperoni if using.
- Bake for 20-25 minutes until the cheese is melted and bubbling.
- Broil for the last 2-3 minutes to brown the cheese. Let rest for 10 minutes before serving.
Notes
Resting the casserole after baking allows the juices to settle, preventing a watery plate. Serve with a side salad or garlic bread.
