  • 1 lb smoked sausage sliced into rounds
  • 2 lbs potatoes peeled and cubed
  • 1 tbsp olive oil
Cheesy Ranch Sauce
  • 1 packet ranch seasoning mix dry powder
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup milk
  • 0.5 cup sour cream
  • 2 cups cheddar cheese shredded
  • 1 tsp garlic powder
  • 0.5 tsp black pepper

Method
 

  1. Peel and cube potatoes. Boil in salted water for 8-10 minutes until just tender. Drain.
  2. Slice sausage and brown in a skillet with olive oil for 5 minutes.
  3. In a bowl, mix soup, milk, sour cream, ranch packet, and spices.
  4. Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
  5. Combine potatoes, sausage, and sauce mixture. Pour into baking dish.
  6. Top with shredded cheddar cheese.
  7. Bake for 20-25 minutes until bubbly and cheese is melted.
  8. Let rest for 5 minutes before serving.

Notes

For a crispy top, broil for the last 2 minutes of cooking. Use Yukon Gold potatoes for a firmer texture.
