Method
- Combine warm water, yeast, and sugar in a large bowl. Let sit 5-10 minutes until foamy.
- Add olive oil, salt, and 2 cups flour. Mix until combined, adding remaining flour slowly until a soft dough forms.
- Knead for 7-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 60-90 minutes until doubled.
- Mix melted butter, minced garlic, chopped rosemary, parsley, and red pepper flakes in a small bowl.
- Punch down risen dough and divide into 16-20 equal pieces. Roll into balls.
- Dip each ball into the garlic butter mixture and arrange in a parchment-lined 9x13 pan. Brush remaining butter over top.
- Cover and let rise again for 30-45 minutes until puffy. Preheat oven to 375°F (190°C).
- Sprinkle parmesan cheese over the rolls. Bake for 20-25 minutes until golden brown.
- Remove from oven, sprinkle immediately with flaky sea salt and fresh rosemary sprigs. Cool slightly before serving.
Notes
The total time includes 1.5 to 2 hours of rising time. For best results, use fresh herbs and fresh garlic.
