Ingredients
  

Pastry Base
  • 2 sheets puff pastry thawed
  • 1 egg beaten (for wash)
Garlic Herb Topping
  • 3 tbsp unsalted butter melted
  • 2 cloves garlic minced finely
  • 1 tbsp fresh rosemary chopped
  • 0.5 cup parmesan cheese grated
  • 0.5 cup mozzarella cheese finely shredded
  • 1 pinch sea salt flaky

Method
 

  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. In a small saucepan, melt the butter with the minced garlic over low heat. Cook for 1 minute until fragrant. Remove from heat and stir in chopped rosemary.
  3. Unfold thawed puff pastry sheets on a lightly floured surface. Use a star-shaped cutter to cut out stars.
  4. Place pastry stars on the prepared baking sheets, spacing them 1 inch apart.
  5. Brush each star lightly with the beaten egg wash.
  6. Spoon a small amount of the garlic butter onto the center of each star, then top with parmesan, mozzarella, and a pinch of salt.
  7. Bake for 12-15 minutes or until puffed and deep golden brown.
  8. Cool on the baking sheet for 2 minutes before transferring to a wire rack. Serve warm.

Notes

Ensure puff pastry is cold before baking for maximum puff. If the dough gets warm, refrigerate the tray for 10 minutes before putting it in the oven.
