  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter cold, cubed
  • 1.75 cups buttermilk cold
Garlic Herb Coating
  • 0.5 cup unsalted butter melted
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
Assembly
  • 3 cups sharp cheddar cheese grated
  • 0.5 cup parmesan cheese grated

Equipment

  • Bundt pan (10-12 cup)
  • Mixing bowls
  • Whisk
  • Pastry brush

Method

  1. Preheat oven to 350°F (175°C). Thoroughly grease a Bundt pan with butter.
  2. Whisk flour, baking powder, soda, and salt. Cut in cold butter until crumbly.
  3. Stir in cold buttermilk to form a shaggy dough. Knead gently and roll into 1-inch balls.
  4. Mix melted butter with garlic and herbs in a bowl. Toss cheese in a separate bowl.
  5. Dip each dough ball in garlic butter and layer in the Bundt pan, alternating with generous sprinkles of cheese.
  6. Bake for 35-45 minutes until golden brown and cooked through (skewer test).
  7. Cool in pan for 10 minutes, then invert onto a serving plate.
  8. Top with any remaining cheese and herbs while hot.

Notes

Use block cheese and grate it yourself for the best melting texture. Pre-shredded cheese contains anti-caking agents.
