Cheesy BBQ Pulled Pork Quesadillas

Ingredients
  

Quesadilla Base
  • 4 large flour tortillas burrito size
  • 2 cups pulled pork cooked and shredded (or brisket)
  • 1.5 cups Monterey Jack cheese shredded
  • 1.5 cups Sharp Cheddar cheese shredded
  • 2 tbsp butter or oil for frying
Toppings
  • 0.5 cup BBQ sauce your favorite brand
  • 1 small red onion finely diced
  • 0.25 cup fresh cilantro chopped

Equipment

  • Large Skillet or Griddle
  • Spatula
  • Cheese grater
  • Chef's knife or pizza cutter

Method
 

  1. In a bowl, mix the shredded Monterey Jack and Cheddar cheeses together.
  2. Heat a large skillet over medium heat and add a small amount of butter or oil to coat the bottom.
  3. Place a tortilla in the skillet. Immediately sprinkle a layer of cheese over the entire surface.
  4. Distribute 1/2 cup of pulled pork over one half of the tortilla. Drizzle a small amount of BBQ sauce over the meat.
  5. Once the cheese begins to melt, fold the cheese-only half over the meat half.
  6. Cook for 2-3 minutes per side until the tortilla is golden brown and crispy and the cheese is fully melted.
  7. Remove from pan and repeat with remaining tortillas.
  8. Drizzle the finished quesadillas with remaining BBQ sauce and sprinkle generously with red onion and cilantro.
  9. Slice into wedges and serve immediately.

Notes

To ensure a crispy tortilla, avoid putting too much wet sauce inside the fold. Save the majority of the sauce for the drizzle on top or for dipping.
