  • 1 lb ground pork sausage hot or mild (uncooked)
  • 2 cups baking mix e.g., Bisquick
  • 3 cups sharp cheddar cheese freshly grated
  • 0.5 cup cooked bacon finely chopped
  • 0.25 tsp cayenne pepper optional
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine uncooked sausage, baking mix, shredded cheese, chopped bacon, and cayenne pepper.
  3. Mix by hand or with a stand mixer until well combined and a dense dough forms. (If too dry, add a splash of milk).
  4. Roll mixture into 1-inch balls and place on the prepared baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Remove from oven, garnish with fresh parsley, and serve warm with dipping sauces.

Notes

Grate your own cheese for the best texture. Pre-shredded cheese contains anti-caking agents that can make the balls dry.
