Ingredients
  

For the Santas
  • 1 lb large fresh strawberries
Cheesecake Filling
  • 8 oz cream cheese softened, full-fat
  • 0.5 cup powdered sugar
  • 0.5 tsp vanilla extract
Decorations
  • mini chocolate chips or edible black pearls for eyes
  • red sprinkles or edible food marker for nose

Equipment

  • Hand mixer or stand mixer
  • Piping bag with star tip (or Ziploc bag)
  • Sharp knife

Method
 

  1. Wash and thoroughly dry strawberries. Slice off the stem end for a flat base, then slice off the tip for the 'hat'.
  2. Beat softened cream cheese until smooth. Gradually beat in powdered sugar until thick and stiff. Mix in vanilla.
  3. Transfer the thick, viscous cheesecake filling to a piping bag.
  4. Pipe a generous dollop of filling onto the strawberry base for the beard/body.
  5. Place the strawberry hat on top of the filling, gently pressing it down.
  6. Pipe a small dollop of filling onto the hat's tip for the pom-pom.
  7. Add mini chocolate chips for eyes and a red sprinkle/dot for the nose.
  8. Refrigerate for at least 30 minutes before serving to allow the filling to firm up.

Notes

Ensure strawberries are completely dry and cream cheese is at room temperature for the best results. If the filling is too soft, chill briefly before piping. The thick, viscous filling is key for stability.
