- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Remove outer damaged leaves of cabbage. Cut vertically into quarters or eighths, keeping the core intact.
- Place wedges on the baking sheet. Brush generously with olive oil on all sides.
- Sprinkle wedges evenly with garlic powder, salt, and black pepper.
- Roast for 15 minutes, then carefully flip the wedges over.
- Roast for another 10-15 minutes until edges are charred and centers are tender.
- Whisk together mayonnaise, sriracha, lemon juice, and minced garlic in a small bowl.
- Serve cabbage hot, sprinkled with fresh herbs and red pepper flakes, with the sauce on the side.
Notes
Do not remove the core of the cabbage before cutting, as it holds the wedges together during roasting.
