- Heat butter and oil in a large skillet over medium heat. Add sliced onions and cook for 5 minutes until soft.
- Reduce heat to medium-low. Add salt and brown sugar. Cook for 30-40 minutes, stirring occasionally, until deep golden brown.
- Stir in balsamic vinegar and cook for 2 minutes to deglaze. Remove from heat and cool slightly.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unfold puff pastry and cut into 4-6 equal squares. Score a border 1/2 inch from the edge and prick the center with a fork.
- Place pastry on baking sheet. Spoon onions into the center and top with crumbled goat cheese.
- Brush the pastry borders with the egg wash.
- Bake for 18-22 minutes until pastry is puffed and golden brown.
- Drizzle generously with balsamic glaze and garnish with fresh thyme before serving.
