Ingredients
  

Gingerbread Cookies
  • 3 cups all-purpose flour
  • 2 tsp ground ginger
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.5 cup dark brown sugar packed
  • 0.5 cup molasses unsulphured
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup coarse sparkling sugar for rolling
Filling and Caramel
  • 8 oz cream cheese softened brick style
  • 4 tbsp unsalted butter softened
  • 2.5 cups powdered sugar sifted
  • 1 tsp vanilla extract
  • 0.5 cup thick caramel sauce

Method
 

  1. Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl.
  2. In a large bowl, cream softened butter and brown sugar until fluffy. Beat in molasses, egg, and vanilla.
  3. Gradually mix dry ingredients into the wet mixture just until combined. Cover dough and chill for at least 1 hour.
  4. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  5. Scoop chilled dough into balls. Roll heavily in coarse sparkling sugar.
  6. Place on baking sheets 2 inches apart. Bake 10-12 minutes until set but still soft in centers. Cool on pan 5 minutes, then transfer to wire rack to cool completely.
  7. To make filling: Beat cream cheese and butter until smooth. Slowly beat in powdered sugar and vanilla until fluffy.
  8. To assemble: Spread filling on the flat side of half the cookies. Drizzle caramel over the filling. Sandwich with remaining cookies.
  9. Store assembled cookies in the refrigerator.

Notes

Total time includes one hour of chilling time for the dough. Ensure cookies are completely cool before filling so the cream cheese frosting does not melt.
