Ingredients
  

  • 1 Tbsp Olive Oil
  • 1.5 lbs Cooked Chicken shredded or cubed (e.g., rotisserie)
  • 2 Tbsp Cajun Seasoning adjust to heat preference
  • 1 lb Rotini or Fusilli Pasta cooked al dente
  • 8 oz Cream Cheese softened and cut into cubes
  • 1 can Cream of Chicken Soup 10.5 oz, or Cream of Mushroom
  • 1 cup Chicken Broth
  • 0.5 cup Milk whole or 2%
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • 0.25 tsp Black Pepper
  • 2 cups Shredded Cheese Blend divided (Cheddar, Monterey Jack, or Mexican blend)
  • Fresh Parsley chopped, for garnish (optional)

  • Large Skillet or Saucepan

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish. Sauté cooked chicken with Cajun seasoning in olive oil for 3-5 minutes. Remove from heat.
  2. Cook pasta al dente. Drain well.
  3. In a separate saucepan, combine softened cream cheese, cream of chicken soup, chicken broth, milk, garlic powder, onion powder, and black pepper. Cook over medium-low heat, stirring, until smooth and thick.
  4. Add seasoned chicken and cooked pasta to the cream cheese sauce. Stir to coat thoroughly.
  5. Pour mixture into the baking dish. Sprinkle 1.5 cups of shredded cheese blend over the top.
  6. Bake for 20-25 minutes, or until bubbly and cheese is lightly golden.
  7. Optionally, sprinkle remaining 0.5 cup cheese during the last 5-10 minutes. Let rest 5-10 minutes before serving. Garnish with parsley.

Notes

Ensure cream cheese is softened for a smooth sauce. Cook pasta al dente as it will continue to cook in the oven. For extra heat, increase Cajun seasoning or add red pepper flakes.
